Product Description

Egg yolk lecithin is extracted from fresh egg yolks. It is light yellow or yellow-white colloidal particles or powder. It's soft and soapy with a slight eggy taste. It will darken when placed in the air; soluble in organic solvents such as ethanol, ether or hexane, insoluble in water or acetone, almost insoluble in vegetable oil and animal fat, and mixed with water to form an emulsion, lecithin is a fat emulsifier.
