Oat beta-glucan is a non-starch polysaccharide present in the oat endosperm and aleurone cell walls. It is a high molecular polymer formed by the monomer β-D-glucopyranose linked by β-(1- +3) and β-(1→4) glycosidic bonds. In oat endosperm and aleurone cell wall components, β-glucan accounted for more than 85%. Oat β-glucan is a short-chain glucan with a relatively small relative molecular mass, and its relative molecular mass varies from 5300 to 257200.
