It is a high molecular polymer formed by the monomer β-D-glucopyranose linked by β-(1- +3) and β-(1→4) glycosidic bonds. Oat β-glucan is a short-chain glucan with a relatively small relative molecular mass, and its relative molecular mass varies from 5300 to 257200.
